March is National Peanut Month and we were excited to welcome back the Georgia Peanut Commission as our #Foodiechats sponsor on Monday, March 13, 2017, for #PeanutPower.

The Georgia Agricultural Commodity Commission for Peanuts was established in 1961 under the Commodities Promotion Act. The Commission conducts programs in the areas of promotion, research, and education. Funding is derived from a $2 per ton assessment on all producers. Governing the Commission is a five man elected board of peanut farmers. It is best known in the State House by its little red bags of Georgia Peanuts. Peanuts are a $2.0 billion industry in Georgia

SPICY THAI PEANUT HUMMUS MADE WITH GEORGIA PEANUTS

SPICY THAI PEANUT HUMMUS RECIPE BY #FOODIECHATS

Ingredients

2.5 15-oz. can chickpeas, rinsed and drained (Keep the juice to add to your mixture if needed)

2.5 Tbsp. of unsalted peanut butter

2+ Tbsp. Sriracha (We added about 1/2 cup, we like it spicy)

¼ tsp. ground ginger (or more to taste)

2 small cloves garlic, minced

1 Tbsp. honey or sweetener of your choice

salt+pepper to taste

1 Tbsp. Peanut Oil

1 Tbsp. Sesame Oil

2 Tbsp. Ponzu Citrus Seasoned Dressing & Sauce (Kikkoman)

2 Tbsp. Seasoned Rice Vinegar

1.5 handful of Georgia Peanuts Skinless & Salted roughly chopped

1 bunch of green onions, chopped

1 bunch cilantro leaves, chopped

2 limes juiced

Instructions

Add chickpeas, peanut butter, Sriracha, ginger, garlic, honey, salt and pepper, hand full of green onion, handful of cilantro, handful of Georgia Peanuts, Peanut Oil, Sesame Oil, Ponzu Sauce and lime juice into a food processor, or we used our Blentec Blender. Process until you reach the desired consistency.

Taste as you go, and add the juice of the chickpeas you sat aside for added moisture if needed.

When finished chill in the fridge for about 45 minutes before serving – it tastes better chilled.

Serve with Beet Chips and Colorful Carrots or your favorite pita chips.

Sprinkle left-over cilantro, peanuts, and green onion on top, and we added a few sprinkles of red pepper flakes for an added kick.
