#Foodiechats Team created Spiralized Red Roasted Pepper Sweet Potato Latkes with The Veggie Bullet: Here’s how you can make them…
What You’ll Need: Makes about 12 small or 6 large
2 lbs Sweet Potatoes
Red Roasted Peppers
Salt & Pepper
EVOO for frying
The Veggie Bullet Spiralizer Setting
Use the Spiralizer setting on your VeggieBullet to create Sweet Potato Ribbons. Once you have your desired amount, put the Sweet Potatoes in Boiling Broth of your choice, and soften until desired texture.
After your Sweet Potatoes are softened, mix all of your ingredients together in a large mixing bowl; Red Roasted Peppers (These have a strong flavor so you’ll use 3 large size slices) Cilantro, Red and Green Onions, Salt and Pepper to taste, Garlic to taste, two eggs, and flour. You’ll want to season your mixture after you add the flour as it can make it the entire mixture lose taste. You could also season your flour ahead of time as well.
Heat your skillet with EVOO, Coconut Oil or any other cooking oils you prefer. Cook on each side until golden brown about 3 – 4 minutes per side depending on the size of your Latkes. Our Latkes were the size of the palm of your hand. Keep them kind of thin so they cook through.
Don’t crowd your skillet, this is a labor of love recipe, but it’s worth every bite. Once your latkes are golden brown, place them on a paper towel while you cook the rest.
Now you’re ready to serve them to your friends and family. We topped ours with tradition sour cream and chives. If you want to cut the calories use greek yogurt and flavor with salt, pepper, and chives. Sauce toppings are endless, so have some fun on your own! Let us know what you come up with. The latkes are best served warm.
